I have been giving this gourmet rocky road as gifts for many years and it is a winner every time. It delicious and easy to make. The ingredients are a little pricey, but if you cut it into small pieces it goes a long way.
You will need
- 300gr toasted marshmallows covered in coconut, chopped coarsely (you could use plain marshmallows, but I love the texture and toasty flavour the coconut gives)
- 400gr turkish delight, chopped coarsely
- 1/4 cup (40gr) blanched and toasted almonds, chopped coarsely
- 1/2 cup (75gr) toasted macadamia nuts (the original recipe calls for toasted shelled pistachios. I love the green specs the pistachios give the rocky road not to mention the flavour, but as they are expensive in South Africa I replace them with macadamia nuts mos of the time)
- 450gr white eating chocolate, melted (I like using sustainable sourced white chocolate drops from The Refillery, but Milky Bar also works well).
This is how

- Grease two 8cm x 26cm bar cake pans (or casserole dishes); line the base and sides with baking paper, extending paper 5cm above the long sides.
- Combine chopped marshmallow, turkish delight and nuts in a large bowl.
- Working very quickly, stir in the melted chocolate; spread mixture into prepared pans and push the mixture down firmly to flatten the top. If you want a very smooth top, heat a butter knife/spoon in warm water and smooth out the top.
- Optional: if you want to make sure the rocky road ‘compacts’ well, cover the rocky road with a piece of baking paper and place a weigh on top.
- Refrigerate until set (it shouldn’t take longer than a hour depending on the temperature) and cut as desired.
- Wrap in wax paper en pop the treats into a tomato punnet, gift box or cake tin an fabric ribbon.
