I don’t know about you, but by the time we get to Wednesday my meal ideas and energy start drying up. This recipe was born on one of those Wednesdays where there were just to many things to do, and to little time to do them in. By the time I got around to thinking about dinner it was late and my creativity and energy were dangerously low. May be I should also add that is was a cold and rainy day in Pretoria. So I scratched around in my cupboard and fridge and this recipe is what happend. I call it my Weary Wednesday Roasted Tomato and Garlic soup. I think it came out pretty well. I hope you enjoy it. I think it will make a great Meatless Monday meal, but as most recipes you can play with it – add some bacon bits if you want to give it a meaty element.
This is what you will need
- 250-300 gr cocktail tomatos (I think any tomatoes will do)
- 2-3 onions (I used brown onions, because that is what I had. But I red onions would be my first choice).
- 6-8 gloves of garlic (you can use more or less, depending on how much you like garlic)
- Olive oil
- Salt, I like using Maldon Salt
- 800gr tin of whole tomatoes and juice
- Salt, pepper and sugar, to taste
- 250ml cream




This is how
- Chop the onions into quarters and place on a baking tray. Add the tomatoes and garlic to the baking tray. Drizzle with a generous glug of olive oil and a sprinkle of salt.
- Pop the baking tray in the oven and grill until the onions and garlic are soft and caramelised.
- Remove from the oven and allow to cool. Squeeze the garlic out of its skin and peel the onions. You can peel the tomatoes as well if you want to. I am to lazy to peel the tomatoes.
- Place the tomatoes, onions and garlic into a NutriBullet or blender, and blend until it forms a liquid.
- Add the tinned tomatoes and juice to the mixture and continue blending until smooth.
- Pour the mixture into a saucepan, add the cream and season to taste with salt, pepper and sugar. Heat until the soup is warm (do not boil) and enjoy with fresh bread.
