I love making and eating oats in the winter months, but somehow I just can’t stomach warm oats in the summer. If, like me, you want to start your day with a healthy and filling breakfast, but you don’t have the time (or energy) to cook up a storm early in the morning – you are going to love my grab-and-go overnight oats. As always, this recipe is easy and quick to make. All you need is about ten minutes before bedtime. At first I made one big mixture in a large bowl, but lately I have started popping the mixture into individual jars that are perfect to grab if you are running late. The jars also help with portion control. The recipe fills six jars (of course it depends on the size of your jars) which means that our breakfast is sorted for three days. Yay! Be sure to use jars that seal well, so that your oats are still fresh on day three.

You will need:
2 cups (500ml) oats
1 t (5ml) salt
1 t (5ml) cinnamon
1/2 t (2,5ml) vanilla extract
1 cup (250ml) cream
1 1/2 cups (375ml) milk
1 cup (250ml) dried fruit of your choice, roughly chopped. (I love using dried apple and apricot)
A sprinkle of your favourite nuts or seeds.
Honey for serving.
Optional: fresh fruit or frozen berries.

This is how:
- Mix the oats, salt, cinnamon and vanilla extract in a large mixing bowl. Add the cream and milk and mix well.
- Now add the dried fruit and nuts. Stir well and divide equal amounts of the mixture into 4-6 small glass jars.
- Screw on the lids and leave in the fridge overnight.
- And…grab and go the next morning. (You might want to add a little milk if the mixture is too dry).
- Optional: Enjoy with honey, fresh fruit or frozen berries if you like.
Enjoy!
