This is the perfect plant-based sweet treat. This fudge is creamy, fudgy and utterly delicious. What makes it even better is that it is naturally sweetened making it surprisingly healthy for you, requires only six ingredients and takes 30 minutes to make.   1. Line a standard loaf pan with baking paper. I found using a silicon loaf pan works very well.
  2. Blend the desiccated coconut in a food processor on high for about 4 minutes until a creamy butter is formed. Scrape down the sides if needed.
  3. Add the peanut butter and melted coconut oil to the food processor and mix.
  4. Then add the honey/maple syrup 1 Tbsp (15ml) at a time until the sweetness is to your taste. Note: If you add to much honey/syrup the mixture will seize up. Just add a little more melted coconut oil to fix the consistency.
  5. Add the salt and vanilla extract and mix once more, tasting and adjusting the flavours until you are happy with the balance.
  6. Transfer the mixture into loaf pan, spreading into an even layer.
  7. Freeze until firm – about 15 minutes.
  8. Use a hot knife to cut the fudge into squares and enjoy!
  9. The fudge can be kept for up to 10 days in the refrigerator. I found keeping the fudge in the freezer works better especially in hot weather.
