These Cauliflower cakes are quick and easy to make. And so moreish I ate four of them. I adapted the recipe from one of keyingredient.com’s recipes.
You will need:
½ head of cauliflower (I used cooked cauliflower, but you can also use raw cauliflower)
1 cup of Cheddar cheese
¼ cup of Parmesan cheese *
1 teaspoon of freshly cracked black pepper
A pinch of salt
A pinch of smoked paprika
1 free range egg
*I also added a piece of Brie I had leftover in the fridge (that was a great idea – even if I say so myself)
This is how
- Chop or break the cauliflower into fine pieces. If you are using raw cauliflower you will want to pop it into a food processor to chop it into a finer crumb.
- Place grated cheese in a large mixing bowl, add the cauliflower, egg, pepper, salt and paprika. Mix everything together until combined.
- Lightly grease a muffin tray with oil and spoon roughly 1 and a half tablespoons of the mixture into each hole.
- Bake for 5 minutes if using cooked cauliflower, and 15 minutes for raw cauliflower.
