When you read the ingredients to this recipe you most likely will think ‘no way’. This can’t work! It’s just to weird. But I promise you this dish will change your life! It is easy to make and the flavours just work together perfectly. The recipe is barely enough for 2 people, because you definitely will be wanting a second helping. So double or triple it from the start.
You will need:
1 Green apple (I like using Granny Smith apples), diced into blocks
60ml fresh coriander leaves
30ml fresh mint leaves
150ml plain yogurt (I like using Greek yogurt)
45 ml Ricotta cheese
2 green chillies, chopped
1 bunch of spring onions, chopped
5ml salt
5ml sugar
5ml garlic, crushed
5ml fresh ginger, grated
225gr chicken breast, cubed
25ml sultanas, for serving
This is how:
- Fry the cubed chicken for a few minutes. Don’t fry it for to long, you just want to seal it.
- Pop the apple, 45ml coriander, mint, yogurt, ricotta, chillies, spring onions, salt, sugar, garlic and ginger into a food processor and process until all the ingredients are combined (1 to 3 minutes, depending on the strength of your processor).
- Heat the green yogurt mixture and boil for 2 minutes.
- Add the fried chicken to the mixture and boil for a further 15 minutes.
- Serve with rice and a sprinkle of sultanas and the rest of the coriander leaves.
