Store bought, individually wrapped granola bars may be tasty, but making your own is a healthier and more environmentally conscious option. Making your own granola bars is simple, cost-effective, and better for your health. And will keep those individual wrappers, that take hundreds of years to break down, out of our landfills. This super simple recipe is nut-free, only has six ingredients and requires no baking. And you can play around the recipe – swapping or adding ingredients.
You will need:
1 cup of apricots or pitted dates (if you don’t like tartness opt for the dates)
½ cup of coconut oil (melted)
1 cup of rolled oats
½ cup of raisins
¼ cup of shredded coconut
½ cup of chocolate drops/nibs


This is how:
- Combine the apricots or dates and coconut oil in a food processor until it forms a paste.
- Combine the oats, raisins, coconut, and chocolate chips. Mix well.
- Combine the paste with your dry ingredients, knead together with your hands until well combined. Firmly press your mixture into a baking tray lined with wax or baking paper. I have found that placing a heavy casserole dish on the mixture helps it set better.
- Chill in the freezer for 30 minutes. Remove from the baking pan from the freezer, cut into the size of bars your prefer, and store in an airtight container.
