These bite sized treats are not only vegan and super easy to make, but also something fun to make with the kids.

You will need:

1/2 cup of your favourite nut butter

1/3 cup & 1 Tablespoon of Almond flour

2 Tablespoons of coconut sugar

1/4 teaspoon of vanilla extract

1/4 teaspoon of cinnamon

1/4 cup of finely chopped pecans

A pinch of salt

Plus extra coconut sugar and cinnamon for rolling the bites in

This is how:

  1. Mix together all the ingredients in a big bowl. If you prefer a smoother consistency you can blend all the ingredients in a blender until completely smooth. But I prefer it a bit chunkier. Chill the mixture in the fridge for at least 30 minutes. Wet your hands and roll into bite-sized balls.
  2. Mix the extra sugar and cinnamon in a small bowl. Roll each ball in the sugar mixture before popping in the fridge to set. These bites are best eaten straight out of the fridge. They don’t keep their shape well outside the fridge, especially in hot weather. No need to worry, because they are so good they won’t last long enough for this to be a problem =)
